he Orleans process, as it has long been called in France and other parts of the world, is just the old way of letting wine ferment slowly into vinegar inside partly filled barrels. Slow, old fashioned methods do not fit easily into modern economy but Jean Francois Martin, 6th generation, is convinced that the company has survived solely because of the merits of the product.
Today, Martin Pouret has created another outstanding vinegar from the region of Champagne Ardennes in the North-East of France. The unique micro climate combined with the chalky limestone soil gives Champagne wines their unique characteristics. Champagne Vinegar is made from the sediment of Champagne according to the Orleans process and Martin Pouret has preserved all the wine flavor it is made from.
With a crisp, acidic, light flavor and a nuance of the oak barrels it is made and aged in, this delicate vinegar enhances salads, marinades and sauces. Product of France.
