If you have a yen for your own crepes, try this easy-to-use mix from Francine. The mix contains no sugar, so is suitable both for savory main-course and for sweet dessert crepes. Directions for use: Pour the contents of the sachet into a mixing bowl. Add 50cl (2 cups) of milk and stir with a whisk. Add a tablespoon of oil or 25g (1 ounce) of melted butter and stir again. Pour a scoop of the mix into a lightly oiled, preheated skillet. When the first side is nicely golden, turn using a flick of the wrist, or if you must, a spatula. Let brown, then add your filling.

This mix serves for sweet choux and profiteroles as well as for savory gougeres (cheese puffs). All you have to add is water and eggs. Instructions: Preheat the over to 400 degrees Fahrenheit. In a bowl, mix three eggs with 3.5 fluid ounces of warm water. Add the contents of one sachet of Francine and mix until smooth. Use a small spoon to drop the choux on a lightly greased baking sheet. Space them well, because they will swell during cooking. If you are making chouquettes, sprinkle sugar on the choux before putting in the oven. Cook between 15 and 25 minutes, depending on the size of the choux, until they're nicely golden. To make gougeres, add 2/3 cup of grated cheese (Comte or Gruyere, for example) or crumbled blue cheese into the dough, then sprinkle a bit of grated cheese on top of the choux before baking. The box contains 2 sachets; each sachet will make 20 choux.

It is made from four olives: the Salonenque, Beruguette (the local name for the Aglandau), Grossane, and, from the Bouches-du-Rhone area, Verdale. The Vallee des Baux extends from the south side of the Alpilles range to the Crau plane and encompasses the villages of Aureille, Fontvielle, Mouries, Maussane, les Baux, and le Paradou. This oil was awarded, in 1997, an AOC, or Appellation d'Origine Controlee (the French system for designating and controlling the geography and quality of wines and other products).
